Dear Diary,

I haven’t written anything (for you) in years because there hasn’t been anything to write…

Well, yesterday a handsome man came into the bakery and asked, “Do you have anything that’s grain free?”  I looked away because I needed to gather my strength– he was that beautiful!  He had beautiful hair; beautiful (glowing) skin; a beautiful smile; nice hands, and he smelled good too…  He repeated his question.  Then I answered, “Um, the only thing we have for today is cookies.  But I messed those up; so they’re not for sale.  I mean they’re good it’s just I ran out of peanut butter so I used chocolate hazelnut butter and some almond butter to make up the difference…  That’s why we can’t sell ’em because the label in the counter says: Peanut butter cookies and they’re not exclusively peanut butter…”  I knew I was rambling from nervousness.  Then he said, “What about a sample?  I need something to eat before I catch my flight.”  I gulped for air and shook  my head (to signal yes).  Then I held up my hand and said, “Wait here!”  I ran to my cubby station in the back.  I had planned on taking the chocolate hazelnut butter/almond butter/ peanut butter cookies home later.   I smiled as I stacked 6 cookies into a paper bag.  I ran back as quickly as I could to the handsome man.  I handed him the bag and asked, “Are you gluten free?”  He said, “I don’t eat wheat.  I’m grain free.”  I had never heard of that before.  We only started selling the flourless peanut butter cookies because the Mayor’s wife has a gluten intolerance.  And she’s a regular customer.

The original “Flourless Peanut Butter Chocolate Chunk Cookies” recipe is from Michael Recchiuti.
